In the Kitchen - Sausage Balls

Saturday, my husband, and I took an adventure in the car. We do this from time to time. We never know where we will end up and Saturday was no different. 

We ended up driving down south for a little bit, then we headed west. We saw many fun and unique things along the drive. I will write a separate post about the adventure later. 

Several years ago, we had heard about a restaurant called, LocoCoyote Grill, so we wanted to check it out. When we were being walked to our table, the hostess asked if we had been there before and we indicated we had not. She tells us, "make sure you try the Coyote Balls, they are yummy"! We asked what they were, and she described them for us. I will not divulge the recipe for them, but I'll show you pictures. 



The Coyote Balls were amazing. They did have a bit to them though. The dipping sauce was also delicious, and it too had a kick!

As I thought about my recipe today for In the Kitchen...the Coyote Balls reminded me of Sausage Balls. Here is the recipe for Sausage Balls. 

 

SAUSAGE BALLS

1 lb. hot or mild sausage

4 c. Bisquick

8 oz. shredded Cheddar Cheese

 

Mix sausage, cheese, and Bisquick until well blended. Shape into marble-size balls. Bake 15-20 minutes at 350*. 

These also freeze well if you want to make them up and save them for another day.

All Things ARE Bigger in Texas - Ham and Eggs Style

They say, 'everything is bigger in Texas'. This is true when it comes to breakfast from Ham and Eggs. 

When our family lived in the Lewisville, Texas area from 2001 - 2013, oftentimes we would frequent Jackie's Ham and Eggs for breakfast. We took many of our family members and visitors there, too! 

We would warn them not to let their eyes be bigger than their stomach because the food was ginormous, but oftentimes that statement was ignored by many. Even so still today...!

I recall a time that my parents had come into town from Amarillo, Texas. We took them out for breakfast. Dad wanted a short stack of pancakes. I told him, only to order what the menu indicated because they would cover his plate. When his plate arrived, the hotcakes were hanging over the edges and the look on my dad's face was priceless! 

This is one of many memories I have of visiting Jackie's Ham and Eggs with our guests. Let's fast forward to 2020. 

A few weeks ago, our friends David and Glenda Cates had invited us to breakfast to celebrate David's birthday. My husband was unable to make it, but David, Glenda, and I ventured out to Lewisville to enjoy the hearty breakfast. 

Earlier in the week, I had contacted the restaurant to confirm they were open during the Pandemic our world is experiencing now and to inquire about their hours. Their response was quite timely. I notified Glenda and we planned to drive out there. 

The day we decided on did not go as planned and we had to wait for another day to enjoy the hearty breakfast Eggs and Ham is known for. That was good though because now my husband was able to join us. 

This last Saturday, we all ventured out to Lewisville to partake in great conversation and hearty food. We were not going to leave hungry which was guaranteed. 

My husband and I arrived first. We both recalled many wonderful memories of living in the Lewisville area. While we waited for our friends, we walked around the shopping center. The first thing that caught both of our attention was the American Flag as well as other flags from the different Branches of our Military. 

David and Glenda arrived, and we all went inside donning our masks! We were immediately greeted by one of the employees. She seated us, handed us our menus, and took our drink order. Her name was Linda. 

A few minutes later, Ms. Linda returned to our table to ask if we had any questions about the menu and took our order. She was on point each time she came to our table ensuring our drinks were always full. 

As we studied our individual menus, my husband chose the Country Breakfast Specialty consisting of Ham-N-Eggs (Texas-Sized Slab of Ham). Now mind you, on the drive over he indicated he was not very hungry and would probably get something small, like biscuits and gravy. That did not last long... which I knew it wouldn't. 

David settled on one of the Texas-Sized 4 Egg Omelettes with Grits and Glenda also chose one of the Country Breakfast Specialties of Country Sausage. Finally, I also chose one of the Country Breakfast Specialties consisting of Bacon Lovers Breakfast (4 slices) with Grits. 

While we waited for our food to arrive, we talked about many different things. From time to time, Ms. Linda would stop by our table to inquire if we needed anything extra (additional condiments, drinks or just to share a friendly smile). She was awesome. Her cheerful expression, her warmth, and her caring attitude was radiant. I thought to myself, I sure wish I had this kind of service every time I visited a restaurant. To me, that is particularly important especially these days when so many people are not getting out and about. It is nice to know that even during a pandemic, people have something to smile about! Thank you, Ms. Linda!!! YOU ROCK!!! At one point, we asked Linda how long she had been with the restaurant, her reply, "16 years".

A few minutes later, Ms. Linda arrived back at our table with our Texas-sized plates in her hands. David expressed the biscuits were even bigger than what he remembered and told us, wait, and see! 

Oh my, indeed they were...Ronnie was anticipating his biscuits and gravy and Ms. Linda exclaims, "can't have a biscuit without gravy in Texas, it's illegal". We all laughed...!

As Ms. Linda handed each one of our plates of deliciously good food, I could not wait to dive into my grits! I am the only one in my family that likes grits. I am not sure where my love for them comes from, but if I have the choice between grits or potatoes, I will choose grits every time. 

As I indicated above, I chose the Country Breakfast Specialties consisting of Bacon Lovers Breakfast (4 slices) with Grits. Does it not just make your mouth water? 


Ronnie's choice of the Country Breakfast Specialty of Ham-N-Eggs (Texas-Sized Slab of Ham) looked amazing too. He said the ham was awesome! 



This is Ronnie's biscuit. The photo I previously posted above was his biscuit in comparison to the size of mine. His was ginormous!!! 

David's choice of the Texas-Sized 4 Egg Omelettes with Grits above also looked amazing. I may just have to try one of their Omelettes the next time we eat here. 

Glenda's choice of the Country Breakfast Specialties of Country Sausage also impressed me. I am funny about sausage, but I could probably eat these! 

               

As you see, none of us left hungry. I think our eyes were bigger than our stomachs - but isn't that the way it usually works? As we sat there finishing up our meal, Ms. Linda visited our table again. This time, she also shared with us a tidbit about Ms. Jackie's Ham and Eggs. She went on to share the story about a Dallas Cowboy player who had come in to eat at Jackie's Ham and Eggs told Ms. Jackie, "that's a lot of food" with his hands held apart...Jackie looked at him and said, "do I tell you how to kick a football"? We all got a kick out of this story and our chuckles rang through the restaurant. 

Looking at the decor in the restaurant, it is obvious that several of the Dallas Cowboys have enjoyed the restaurant on many occasions in the past. 


They also have specials they run from time to time. The ones that were offered when we visited were the following: 

Upon our completion of breakfast, Glenda and I asked Tom if it would be possible to get a photograph with the staff of Jackie's Ham and Eggs. They all joined in on the photo op. In the end, we all shook hands and indicated we would be back soon! 

I give Jackie's Ham and Eggs 5 stars on their hospitality, their good food, and the ambiance of the restaurant. Everything IS bigger in Texas! 

I would highly recommend Jackie's Ham and Eggs if you like eating the most important meal of the day. Their hours have been changed a little bit due to the COVID, but they are open for business and would love to see you and your family visit their restaurant. You will not be disappointed.

Monday - Thursday: 7 a.m. - 12:30 p.m.

Friday - Saturday: 7 a.m. - 1:00 p.m.

Sunday: 7 a.m. - 2:00 p.m.

A Survivor’s Story

In 1985, Josephine “Jackie” Shields and her Husband Bob Shields opened Ham- N – Eggs in Lewisville, Texas. Jackie’s desire to open a restaurant came out of adversity she faced early in her life. In 1942, Japanese forces invaded Manilla, Philippines. Jackie at the time lived in Manilla as her father served as a high-ranking military officer. For three years, two months, and fourteen days of World War II Jackie, her sister, and mother were held captive by Japanese forces. There Jackie and her family were starved and tortured among many other prisoners of war. “Putrid water, rice, and fish heads were all that we were fed. “, Jackie Said. 

The internment camps in the Philippines produced some of the harshest conditions. Of those held captive in the Philippines, one-third of the 13,966 civilians and 39,700 soldiers who were interned by the Japanese died before the war ended according, to Australian historian Gavan Daws. Of those many casualties was Jackie’s father a survivor of the Bataan death march who later died upon returning stateside of complications from malaria and other diseases. “He stood 6 – foot – 4 but weighed only 86 pounds. You can imagine what a sight he was.” Shields told. From those experiences, Jackie vowed to never let anyone go hungry again!

Deep in the heart of North Texas Ham-N- Eggs quickly became a popular spot to dine and developed a following among professional athletes. Ham—N—Eggs has attracted the likes of Dallas Cowboy and Dallas Star greats like Troy Aikman, Mike Modano, Daryl Johnston, Mark Stepnowski, Chad Hennings, Emmitt Smith, Tony Romo, and Mark Tunei. Known for our ginormous pancakes, friendly service, and former owner Jackie Shield’s larger than life personality. Ham- N- Eggs has been serving up the community for over 34 years.

Jackie Shields ruled the roost for over 22 years until her passing in late 2007. To keep her legacy alive Jackie’s son Jody Rice and her loyal staff continued to spread Jackie’s mission. To honor Jackie Ham – N – Eggs was renamed to Jackie’s Ham – N – Eggs. In 2016, Jackie’s son Jody Rice passed away and his sons located in California took ownership. Around the same time Ms. Margaret, Jackie’s longest-tenured employee was rehabbing a torn rotator cuff. “It was a tough period for Jackie’s.”, Ms. Margaret said. “All I wanted to do was be there and when I was there, I had to take a step back from my normal duties.”

In mid-2019, the Rice family approached Ms. Margaret about taking over Jackie’s Ham – N – Eggs. Over the years Jackie and Ms. Margaret had developed a special bond. The Rice family viewed Ms. Margaret as the most suitable person to continue their grandmothers’ mission. Apprehensive to take on such a large business venture by herself, Ms. Margaret enlisted the help of her son Tom Gauna and brought back their loyal kitchen staff, led by Domingo Ramirez and Rigo Castillo. Together with our loyal staff and passion to serve our guest Jackie’s Ham—N—Eggs continues to strive to give our guests an eggcellent experience you won’t soon forget. In the words of Jackie, “Happiness is something we like to share. It takes work. It takes going the extra mile.” We look forward to feeding you and thank you for being our guest.

Y - A fun story in single letters - great for new readers!

As a new blogger, I have been learning how to conduct reviews. A friend and a fellow blogger, The Mommies Review loaned me her book called, Y by Larry Baum and Joanna Pasek for me to review. The thoughts inside of this review are my own. 

When my youngest daughter had her baby shower this last January, she asked everyone who came to bring a book for the baby's library she wanted to make for him. Her request was a huge success and Baby Hays received many wonderful books. 

I had mentioned this to my fellow blogger friend and she indicated she had several children's books I could review. 

Looking at the cover of Y - A fun story in single letters - great for new readers, I thought to myself this is a great concept. A picture book. My grandson who will be six months old on the 12th of August loves being read to and looking at the pages. I was excited to have received the Y book for review. 

The inside page of this book states this: The first step in learning to read is a big one; from single letters to whole words. That's a lot to ask of young children. To make the transition to reading as simple and easy as possible, why not use the shortest words possible, at least in the very first books that children read? How short can words be and still make a story? Three letters, two letters, one letter? The Bo books use very short words to tell very simple stories, with characters, action, and humor, to help young children cross the threshold into the world of reading. You can read them for free as e-books or buy the paper books for close to their cost, with any author's profit donated to UNICEF. 

I personally do not like to read unless it is an Autobiography or true-life story. I spent most of my younger years honing my music skills and reading music. Books were not in that equation...I know that is not good. I have found as I have grown older, I enjoy reading more books these days. Especially when I am reading to my grandson. 

Y compels the person to imagine you are learning to read a new language. How would you do it? First, you will learn the alphabet if it has one. Then you would string letters into simple words and read stories to get familiar with the words and how they are used. That might seem a bit hard, wouldn't you agree? 

It would be even harder if you have never learned a language before. And what if you were only a little kid? That would be a big challenge. But—think about it—that is what we expect children to do routinely to learn reading. 

What if we could help the kids by making books easier to read? Would it seem that the children are lazy for not learning to read or would it be considered a challenge for them?

I know for myself; I wanted my kids to learn to read and write properly in the beginning. I wanted them to enjoy reading and writing- so I taught them to read and encouraged them when homework was assigned that included reading. Did they like it? Sometimes and at other times, not so much. But they read...and they learned to write. 

Y takes this concept and makes it easy for kids to read. Do you remember a time when your child was trying to pronounce a large word like, "xylophone'? Do you remember how you taught them to say it correctly? The first thing that comes to mind for me is breaking it down into syllables. XY LUH FOHN (even at that, it is misspelled) I can see my kids getting frustrated as I write this review. Therefore, the authors' Larry Baum and Joanna Pasek use Capital Letters and single letters to teach the kids how to read. 

For instance, the word, "YOU" would be seen in the book as U. I have a problem with the way these books are written to teach our kids. I feel like they need to learn the proper word spelling to learn how to write it properly. I would be concerned when they are writing papers as they grow older, that "YOU" would be spelled, U. Am I wrong in my thinking? 

The pages in the book allow the reader(s) to come up with their own story as they look at each page. There are no letters or words. The pictures are clean and crisp. There is one page with the father figure and the little girl who is pointing up to the sky indicating Y? I studied this page for a few minutes as I was wondering what the Y represented. I looked back through the previous pages to see if I could figure it out. 

The first few pages showed the father figure, the little girl, butterflies on the pages along with a Bee buzzing by. Then you have the pages with the little girl asking Y? 


I continued to look at the next few pages. Still in the back of my head, I am thinking if I were reading this book to my grandson, I would be making the story up as we turned the pages...

The Father figure looks perplexed, the little girl is standing there staring at this man. I continue turning pages...they both are looking towards the ground with dismayed looks. The little girl begin
s to crouch down as though she is looking for something on the ground...

The Father figure is sitting on the ground and the little girl is standing up and bent over pointing to the ground, Y? 

Father figure shrugs his shoulders and puts out his hands as if he were saying, "I don't know". A few more pages and there are beautiful flowers on the ground. They both are looking at them. Y? says the little girl. 

Flipping through more of the pages, the Father figure looks frustrated and the little girl is smiling. There is a Bee close to the flower. I C A B!

The Father figure and the little girl are ecstatic they have seen a bee on the flower. End of the book. 


You tell me, I C A B? or would you rather them read, I see a bee? I get the Y? The little girl was asking "why". This book reminds me of shorthand I took in school with short letters that represented a full word or phrase. Maybe to some, this type of reading is okay, but I would prefer my grandson to learn the proper spelling of the words in the beginning.

I am going to give this book a 3 rating out of 5. I feel this would be confusing to kids when it comes time for them to read the proper word and then try to write it.

In the meantime, I am going to order a copy of this book for my daughter to review. I would like to hear her thoughts for her son. I will give an update at a later time.

Catfish Sam's and Birthday Dinner with Friends

 A few weeks ago, we had the opportunity of meeting up with C, G, and D to celebrate D's birthday. We had tried to enjoy breakfast together, but there was a snafu on that outing. 

They were going to have a drive-by birthday meet and greet, but D decided he would rather spend time with us, his friends...

He and I spoke after G and I discussed where we might want to go. We decided upon Catfish Sam's in Arlington, Texas. We had heard good reviews on the restaurant and none of us had eaten there before. 

My husband and I arrived first and took a few photos for the purpose of this review. The inside was a bit dark and one could tell it was an older restaurant. There was a fish tank by the front door that entertained the younger generations while they waited with their parents. I did not see many decorations as I thought I would with it being a Seafood Restaurant. But it was okay. 

 While we waited, I looked over their menu. Notice on the menu it says, "Love at First Bite". That is to be determined later in the evening. 
There were appetizers such as Fried Pickles (which we tried). They were okay. Nothing to write home to mom about, but at least they were not salty where we could not enjoy them. 
Other items they have in their Appetizer section are, Chicken and Sausage Gumbo, Craw-fish Mac & Cheese, Onion Rings, Fried Okra, and Cheese Sticks. 

Continuing to review the menu, I saw Mini Catfish Dinner, Small, Medium, and Large Catfish Dinners, Whole Catfish Dinner (I had to ask about this one - as I could only imagine seeing the entire fish on a plate of food sitting on the table). Luckily, the head is not part of the plate. 

They also have other Seafood Dinners such as Shrimp and other Combo's. Steaks are also served as well as Burgers, Chickens, and Salads. 

When we were all seated, our waitress came and took our drink orders. Normally, the drinks would be received shortly after the order is taken, but we waited and waited and waited...finally - they arrived. It was like pulling teeth though to get refills after the initial drinks arrived. Even when we asked another waiter to assist us. Nothing. 

If anyone knows me at all, I am a stickler when it comes to foodservice and the wait staff being on point with drink refills, replenishing other items such as napkins, cleanliness, etc. I feel like, if I am taking the time to eat in your restaurant, then please take the time to ensure my visit is worth the effort. After all, we are the ones paying your salary. Especially in today's world...

After about thirty minutes of waiting for our waitress to take our orders, I chose the Shrimp Dinner. It came with 6 hand-breaded jumbo shrimp (plain or coconut). I chose plain. It also was served with a baked potato, beans, tomato relish, hushpuppies, and yeast rolls. 
My husband ordered a Double Deluxe Cheeseburger! Go figure...he said it was good.

I do not remember what exactly David ordered, but I think it had something to do with Catfish. It looked good anyway...
Charley, like me, ordered shrimp. 
Glenda pulled a Ronnie and ordered Chicken Fried Steak. She said it was good. 
Our outing to Catfish Sam's for the most part was nice because we were with friends celebrating David's birthday. 

While we sat and visited, David asked if we would eat there again. We indicated we would but that was before the drink fiasco. I suppose we would try them out again to see if the service has improved any in that area. The food was okay. The Hushpuppies were different, but they were good. 

On the way out, Glenda and I stopped for a photo op in front of the Catfish Sam's sign. 
When we left, Charley and Ronnie (my husband) took a photo out front. 
Until next time, I do not think my meal was 'love at first bite', but I am willing to give Catfish Sam's another try though in the future. Happy Birthday David and thank you again for inviting us to share in your happy day!

Art Project for Shark Week

School is rapidly getting closer and closer. That means I will be working with Charley and his parents again to assist with Art and Genealogy projects for some of his classes this year. He homeschools.

Since Shark Week is rapidly approaching, I thought it would be fun for Charley to make a Diorama for Art class. Shark Week starts on August 9th. That is when the art project will start. The deadline for completion is August 16th.

Make a Diorama featuring none other - - SHARKs!!! 


Write out the steps that you took to put this together from your supply list to the end of completion. Hint: you may want to write these out from the beginning as you start your project, so you do not forget something.

Draw out a rough draft of what you want your project to look like. (This is kind of like a blueprint of your project).

The main shark and the focal point need to be made from an empty vegetable can.

Assemble the entire project on a 2 x 4 piece of wood 18" long.

There need to be 4 other sharks smaller than the one out of the can. (TIP: never have even numbers...always have odds. example, 1, 3, 5, 7, etc.). These can be made from paper towel rolls, toilet paper rolls, tissue paper, brown paper sacks, playdough (did you know you can make your own playdough?), etc. (use your imagination).

Include ocean life in your diorama such as seaweed, school of fish, rocks, floating trash, people, etc. I will leave this up to you what you want to do. But there need to be at least 3 additional elements besides the sharks.

Paint the sharks above. Be sure to include a backdrop of some sort. (a piece of material (an old curtain, a sheet, or blue paper to give the illusion of water).

Add the sharks to your Diorama with either sturdy sticks or small dowel rods (these can be found at Lowes or Home Depot). You might even find some at Walmart.

Be sure to use the proper adhesive. I think Gorilla Glue or something along those lines would be the perfect glue for this project (use it sparingly) and use it with parental oversight in a well-vented area.

Once you have finished your project in its entirety, let it completely dry.

Send me a copy of your blueprint, supplies used, and the steps you took to make your Diorama. Lastly, do not forget to send me a photograph of your Diorama.

Organic Microgreens Grow Kit

Back to the Roots seems like the thing to do these days with the hectic pandemic in our lives now daily. How many of you remember planting a garden and waiting for the crops to begin growing? Their garden did not grow in 7 days, that is for sure. I have many fond memories of working in the garden with my mom and dad. However, do not ask me to weed or pick green beans! Just kidding...

Positive Affirmation Pillowcase

As a new blogger, I have been wanting to learn how to conduct reviews. A friend and a fellow blogger, The Mommies Review loaned me her Positive Affirmation Pillowcase by Keeping it Positive for this review. 

As I set it on my desk to study it and such, I could see writing through the bag it was in. The color was pink.


As I sat there and read the label that was attached to the bag, I thought to myself - that is awesome!
